World Gin Day 2017
The final days of autumn arrived quickly and winter is here. Though this sunshine and these mild days feel more like Spring. This is our farewell to Autumn cocktail. Our farewell to the plentiful herb garden. This classic gin sour brings together the vanilla and anise notes of Tarragon. Combined with the toasted chocolate notes of Ironbark Distillery Wattleseed Gin. A welcome to winter frost and evenings filled with toasted marshmallows, mulled wine, and hearty meals.

Tarragon Gin Sour
20ml Tarragon Simple Syrup
50ml Wattleseed Gin
1 Egg white
Garnish: Tarragon Flower
Glassware: Cocktail Coupe
Method: Dry Shake (explanation below) lemon, simple, gin, and egg white for 5 seconds. Open your cocktail shaker and add ice (as much as you can fit into your shaker), or use a large block of ice. Shake the cocktail shaker for 10 seconds. Strain into a cocktail coupe. Spray with an atomizer (if you are fancy) or use a spoon to add 4-6 drops of absinthe on top of the cocktail. Enjoy!
Dry Shake: To shake the ingredients of a cocktail without adding ice.
1 cup white sugar
1 cup boiling water
12 Tarragon Leaves
Method: Steep 12 tarragon leaves into the boiling water for 5 minutes. Strain tarragon leaves from the water. Add the sugar and stir until dissolved. Bottle and store in the refrigerator.
